Istruzioni da fare Moussaka:
- In una pentola fate rosolare la cipolla col l'olio evo ed il basilico, poi aggiungete la carne. Fate andare qualche minuto a fuoco alto, poi aggiungete la salsa di pomodoro, la cannella, poco sale e continuate la cottura a fuoco lento.
- Tagliate le melanzane a fettine, salatele e mettetele in uno scolapasta con un peso sopra per un paio d'ore, così perderanno l'amaro. Prendete le melanzane, asciugatele bene, passatele leggermente nella farina e friggetele. Fatele gocciolate su carta assorbente e lasciatele raffreddare.
- Tagliate le patate a fettine, salatele e passatele in padella con il burro. Fatele rosolare, poi mettetele su carta assorbente.
- Preparate la besciamella: mettete il burro in una pentola e fatelo sciogliere insieme ad un pizzico di sale, la noce moscata e la cannella. Togliete dal fuoco ed aggiungete la farina, fatela assorbire completamente. Rimettere sul fuoco ed inserire il latte. Mescolate con un cucchiaio di legno fino a completo addensamento. Dopodiché spegnete il fuoco e lasciate raffreddare.
- Assemblaggio: ungete una pirofila da forno con un filo d'olio e mettete uno strato di melanzane, poi uno di patate. Proseguite con il formaggio grattugiato ed il sugo con la carne. Terminate con la besciamella. - Infornate a 170° per 30 minuti circa. Spegnete il forno e lasciate riposare la moussaka. Servite tiepida così risulterà più compatta.
