- Aggiungere il mascarpone ai tuorli e sbattere bene. Infine afgiungere l'albume montato mescolando dall'alto al basso con un frustino manuale.
- Immergere i savaiardi nei caffè con un cucchiaio di un liquore a piacere (è meglio rhum). Fare uno strato di savoiardi bagnati mettere sopra la crema fatta. Doppio strato di i savoiardi e la crema.
- Chiudere con una colata di cacao amaro.
- Mettere in frigo un paio di ore.
