- Ho creato la classica crema con un tuorlo a testa più uno per la padella insieme al pecorino. Ne dovrà uscire una massa bella densa, alla quale ho aggiunto pochissima acqua di cottura.
- Ho saltato i rigatoni al dente nella padella con il prosciutto. Ho tolto dalla fiamma e mantecato con la crema d'uovo, emulsionando velocemente e solo se ne necessario aggiungendo acqua di cottura.
