  1. Portate a ebollizione l'acqua della pasta con del sale grosso
  2. Nel mentre tagliate il guanciale a listarelle o dadini e fatelo rosolare per circa 15 minuti
  3. Buttate la pasta nell'acqua bollente e lasciateli cuocere il tempo indicato nella confezione per lasciarli al dente
  4. In una terrina mettete 1 uovo intero e 3 tuorli, sbattete le uova con una forchetta aggiungendo la maggior parte del pecorino, il resto servirà per guarnire il piatto finale, insaporite con il pepe nero e aggiungete un cucchiaio di acqua di cottura della pasta
  5. Scolate la pasta (tenete da parte un po di acqua nel caso vi serva alla fine) aggiungetela alla padella con il guanciale, toglietela dal fuoco e aggiungete le uova sbattute, mescolate e se risulterà troppo secca aggiungete un po di acqua della cottura.
  6. Servite la pasta subito aggiungendo il pecorino e il pepe macinato
